I made this dip after getting the recipe from my wonderful co-worker Kate’s mother. I will admit I was a little leery at first especially when she told me about her experience of making this dish. Long story short she didn’t wear gloves and first rubbed her eyes with pepper juice all over them and then in the shower burned the shit out of her crotch while washing. I don’t know about you but I like my lady parts not burned. First item before preparing the dip.. GLOVES.

Banana Pepper Dip
7 to 8 banana peppers (Cut off ends, seed, and dice. Microwave on ‘high’ power for 3 to 5 minutes. Drain well and allow to cool.)
Mix 3 – 8 oz. pkg. softened cream cheese, 1 cup shredded mozzarella, 1/2 cup crumbled bleu cheese, 1/4 cup parmesan, 1/2 cup shredded asiago, and set aside. Add diced peppers and spread in 13 x 9 inch casserole. Sprinkle lightly with seasoned bread crumbs and drizzle with olive oil. Bake at 350 for about 1/2 hour, until hot and bubbly. Serve with toasted baguette slices or crackers.
